Zucchini Banana Bread

Last week, my aunt brought me three big zucchinis. Of course, I had to look for a recipe of a cake or something 😄. I ended up baking two big loafs of zucchini banana bread with white chocolate chunks. Trust me, this bread turned out delicious!

I was looking into this recipe, while making it.

But I still have so much zucchini left in my fridge… Idk, maybe I should try few more recipes. Something more chocolatey… hm?  

I’ve used:

  • 3 cups all-purpose flour;
  • 1 teaspoon salt;
  • 1 teaspoon baking soda;
  • 1 teaspoon baking powder;
  • 1 teaspoon ground cinnamon;
  • 1/2 teaspoon ground cloves;
  • 3 eggs (room temperature);
  • 1 cup vegetable oil;
  • 1 cup white granulated sugar;
  • 1 teaspoon vanilla extract;
  • 1 tablespoon lemon juice;
  • 2 mashed bananas;
  • 2 cups grated zucchini;
  • 1/2 cup chopped walnuts;

1/2 cup chopped white chocolate.
Preheat oven to 170 degrees Celsius. Mix together flour, salt, baking soda, baking powder, cinnamon and cloves until combined.

In another bowl whisk together eggs, oil, vanilla, lemon juice, sugar, and mashed bananas until creamy.

Add dry ingredients to the egg mixture and beat well, until fully combined.

Stir in the grated zucchini and chocolate. Pour batter into the prepared loaf pan.

Bake for about 60-70 minutes, until tester inserted in the center comes out clean.
